Y’all, I am obsessed with avocado toast. I cannot get enough of it. It is now my everyday breakfast choice. But at first it was a bit time intensive, as I worked out the right simple recipe that can work on school mornings as well as weekends.
I like simple flavors in the morning, so avocado with salt and pepper on toast is perfect. Not too sweet so I don’t have a sugar crash, not too time consuming, not full of things that are terrible for me. Feel free to use this as a base and get instagram fancy with it, but I’m of the ‘ain’t nobody got time for that’ troupe when it comes to weekday mornings.
Some disclaimers: I don’t like too much avocado on my toast, just a nice even layer. Through much research (aka making and eating loads of avocado toast) I have discovered 1/4 of an avocado is the perfect ratio for me. You may like a little more or a little less, so play with it until you find what you like. If you end up only using half an avocado a day like me, you can save the other half for later by spritzing with lemon juice and sealing in a ziplock after pressing all the air out. (This is also how I just tried freezing some after my Walmart Neighborhood Market had them on sale for fifty cents a piece!)
I also try to save on dishes by using a spoon to cut grid lines in the avocado. Then I scoop half of it out with the spoon, and use the back of the spoon to spread it across the toast. Ripe avocados smooth rather easily. If you aren’t worried about the dishes, scoop the avocado into small bowl and mash with a spoon.
I use the pink Himalayan sea salt (not because it’s magic but because it was cheapest by volume at Costco and that’s how we shop) and freshly ground pepper. I’ve also used traditional sea salt and it tasted exactly the same.
Simple Avocado Toast
2 slices bread of your choice (I like whole wheat)
1/2 of an avocado
Dash salt
Dash pepper
- Toast bread.
- Slice avocado as such, then scoop out half for each slice of toast. Smear on toast with back of spoon if you are exceptionally lazy and hurried like me.
- Sprinkle with salt and pepper to your liking.
- Enjoy!
