Weekly Meal Plan for June 1

Hey friends! Here’s this week’s meal plan:



As a reminder, the numbers below the days of the week are our daily high temperature. I don’t want to make a meal that heats up the house on a super hot day, so I try and limit how many eyes of the stove I use and avoid turning on the oven, if possible.

Here are the recipes:

  • Monday
    • Salad: We toss romaine with lettuce from our garden and top with tomatoes, carrots, cucumber, sunflower seeds, and shredded cheese.
    • Spaghetti: I make a simple dish of this, just boiling spaghetti noodles and topping with a mixture of ground pork or ground beef that has been browned and mixed with whatever spaghetti sauce Costco is carrying. This is a simple weeknight dish, not a fancy true Italian from scratch meal.
    • Garlic bread: It’s summer, so I’m not making homemade bread. Frozen garlic bread for the win!
  • Tuesday
    • Tuna patties, mac and cheese, watermelon, edamame: You can find my favorite tuna patties recipe here (it’s my go to!), and easy kid friendly sides are my top choice. This dish is a big hit with the whole family, even my kids who claim they don’t like fish. I found the tuna patties recipe on Pinterest- you can follow me here!
  • Wednesday
    • Lemon pepper chicken on salad, rolls, and fruit: I love to either use the Instant Pot and just season and pressure cook the chicken, or you can dice and cook it on the stove. I use a generous amount of lemon pepper because I love it, and the flavor combination with the fresh salad described above is superb. We have rolls on the side, and whatever fruit we need to use up. This week it will likely be more watermelon or pineapple; applesauce is good in a pinch, too.
  • Thursday
    • Buffalo chicken and cheese sliders, corn, edamame: Can you tell we love edamame?! We buy steam in the bag style bulk at Costco and just love it. To make the sliders, I slice a package of King’s Hawaiian Rolls in half, top with shredded chicken and provolone, and toast in the oven at 350 for 10-15 minutes, until the cheese is nice and melty. We also steam corn on the cob and serve with that beloved edamame. To make the chicken, I just cook it in the Instant Pot and then shred. If your kids won’t eat buffalo chicken, you can either tone the sauce way down by adding butter or use BBQ sauce. The nice thing about sliders is you can season half the chicken with BBQ sauce and half with buffalo sauce. Then the kids can eat the mild ones and you can have your spicy ones!
  • Friday
    • Friday is my light night, my semi-night off from cooking. Salad and frozen pizza make a break for me, especially when I make a big bowl of salad at the beginning of the week to use throughout. More work all at once, but it makes the rest of the week run smoother.
  • Saturday
    • Burgers, veggies and hummus: Saturday is burgers on the grill with a side of fresh veggies and hummus. Yum and a bit of a break for me!
